Creamy Potato Salad
Ingredients
- 6 medium potatoes (about 2 lbs)
- 2 stalks celery, thinly sliced
- 1 medium green pepper, chopped
- 1/3 cup onion, chopped
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 1 tablespoon vinegar
- 2 teaspoons mustard
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 6 hard-boiled eggs, coarsely chopped
Directions
- Cook potatoes in boiling water about 25 minutes or until tender.
- Drain, peel, and cube potatoes.
- Combine celery, green pepper, onion, mayonnaise, sour cream, vinegar, mustard, salt, and pepper.
- Fold in potatoes and chopped eggs until coated.
